my mums love for pumpkins and feta cheese

Method

preheat oven to 210 C/ 410 F/.
line a baking tray with baking paper.
peel the pumpkin, remove the seeds then, cut into bite sized cubes.
toss the pumpkin in the oil and bake for 20 miniuts.
remove from the oven and toss with sesame seeds.
put back into oven for 10 minutes,.
remove from oven drizzle with honey, balsamic vinegar, sprinkle on chilli flakes, salt and peper to taste and crumble feta cheese on top.
serve hot or cold

Ingredients

200g pumpkin or butternut squash
1 tablespoon oil
2 teaspons sesame seeds
1 tablespoon honey
1 teaspoon balsamic vineger
16.5g feta cheese
1/4 teaspoon chilli flakes
salt and peper to taste
