Roasted vegetable pizza with sweet potato and potato wedges and a side salad

I really enjoy pizza and making the bread dough. I wanted to create a healthier version that used local, seasonal produce. I also wanted to include feta cheese in my dish as I really like the flavour and texture.

Method

Dough:
1. Mix water, yeast and sugar together in a small jug and leave aside for 5 minutes
2. Combine flour, salt, oil and yeast mixture together with a knife until it forms a dough
3. Knead for 5 minutes then place back in the bowl, cover with a damp tea towel and leave for 1 hour

Vegetables:
1. Preheat the oven to 220 degrees celsius
2. Chop pepper, onion and butternut squash into 2cm chunks then thinly slice the mushrooms.
3. Coat in olive oil and salt
4. Cook the butternut squash for 10 minutes, until tender, then add the other ingredients and cook for a further 10 minutes

Sauce:
1. Gently simmer the passata, tomato puree, sugar and herbs in a saucepan for 5 minutes
2. Allow to cool

Potato wedges:
1. Evenly chop both the potatoes into wedges
2. Boil the potato for 5 minutes, then drain, but leave the sweet potato raw
3. Coat all potato wedges in oil and salt, then cook for 15 minutes in the oven

Assembling the pizza:
1. Once the dough has proved, split into 2 and evenly roll each into a circle with about 10 cm in diameter
2. Spread each with tomato sauce, sprinkle with roasted vegetables and crumble feta cheese over the top
3. Cook the pizzas for about 15 minutes, until golden brown

Putting the dish together:
1. Stack the potato wedges on the board
2. Slice the tomatoes and place on top of the rocket on the board
3. Place the cooked pizza on the board

Ingredients

To make 2 portions:

250g strong white bread flour
175 ml lukewarm water
1/4 tsp caster sugar
1/2 tsp yeast
1/2 tsp salt
1/2 tbsp olive oil

150ml passata
1 tbsp tomato puree
1/4 tsp sugar
1/2 tsp mixed dried herbs

2 large mushrooms
80g butternut squash
1/2 red bell pepper
1 small red onion
30g feta cheese

1 potato
1 sweet potato
pinch of salt
1 tbsp olive oil

2 handfuls of rocket
2 salad tomatoes
