Chop the onion, pepper and tomatoes into small pieces of a similar size.
Then crack the eggs into a mixing bowl and add the remaining ingredients and mix well.
Add a tablespoon of vegetable oil into a heated frying pan.
Pour the mixture into the frying pan on a medium heat and wait a few minutes for the underside of the omelette to be cooked and is a nice golden brown colour
Then flip the omelette and cook the other side.
Once both sides are cooked slide the omelette onto a plate and garnish with some fresh chopped tomatoes and a little coriander.
Serve with bread or toast.
